“I talk to our suppliers regularly,” explains the Head Chef. “They let me know what’s available and what’s in season. If there’s a shortage of something or if an ingredient isn’t at its best, they’ll inform us so we can adjust our menus accordingly.”

For example, certain vegetables and fruits are only available during specific times of the year. By knowing when these ingredients are in season, we can plan our dishes to highlight the freshest flavors.
